As the name suggests, a mixer is used to mix multiple sounds together. Basically, when you have a live band, you have multiple audio signals being produced on stage: the guitar has its own signal, the bass, each singer, and each microphone placed on the drumkit, keyboards, etc. In order to make all of these sounds come out of one set of speakers (the house PA), you route all these separate signals into the mixer, where they are combined and rerouted into a single audio signal to pass along to the main speakers.
Of course, since these signals all have different volume levels, the mixer is also used to adjust the balance between different signals and shape them using an equalizer (parametric or graphic) and/or stereo panning. The mixer usually also has additional sends and inserts that can be used to add effects to one or more signals before they are combined and sent to the main speakers.
